The UNOX model XACC-0513-EPR is a compact combi oven made to hold up to (5) 12” x 20” full size steam table/hotel pans that are 2.5 inches in depth. It's pan holding rails allow for 2-5/8” spacing between the pans. It's space saving size is achieved because the pans load into the oven via the narrower side of the pan making it only 21 inches wide, this saves on valuable countertop space! The power source is electric requiring 208-240 Volt, 3-phase power, 60 hertz power.
The XACC-0513-EPR has both manual and automatic cooking modes, can store up to 256 cooking programs that can be uniquely named, and can cook a mix of products at the same time synchronizing its operations to have every pan of product ready at the same time!
UNOX MIND.Maps Plus Combi Ovens provide complete control over the cooking process. Able to produce dry heat cooking, steam heat cooking, or a combination of both with exact control of the humidity levels to control the moisture levels in the food. DRY.Maxi™
Minimum humidity. Maximum flavor.
The patented DRY.Maxi™ technology rapidly extracts humidity from the cooking chamber and creates the ideal conditions for food that needs to be cooked in a completely dry environment. STEAM.Maxi™
Steam perfection. Simple as a drop of water.
Unox’s patented STEAM.Maxi™ technology carries out every type of steaming process, even the most delicate ones starting from a temperature of 95 °F. This result is possible thanks to a production of steam that is up to 3 times superior to that obtained with traditional direct injection ovens when using the same amount of water. The result is identical to, if not even better than that obtained when using a boiler combi oven.
AIR.Maxi™
Cooking uniformity. Quality without compromise.
The patented AIR.Maxi™ technology ensures perfect distribution of the air and therefore of the heat within the cooking chamber. Multiple auto-reversing fans and high speed motors guarantee cooking uniformity in all pans: from those at the bottom of the oven to those at the top.
The possibility of choosing from 4 air speeds and 4 semistatic modes allows any type of product to be cooked perfectly, from the most delicate items to products that require high temperatures and a high rate of heat transfer.
